The Forno Bravo Modena Modular Series provides two installation options for restaurants that either have limited kitchen access, or who are looking for a fully-customized installation.

The Modena Kit includes everything required to assemble the standard Modena W Series or Modena G Series ovens, but in a knocked down package. Each oven piece can be moved through a standard doorway, or up stairs—enabling restaurants with limited kitchen access to purchase a complete oven. The Modena Kit provides everything required to assemble the Modena oven, including the core oven components, monoblock cooking floor, insulation, high temp mortar, metal stand and enclosure, door, metal chimney adapter, and detailed assembly instructions.

The Modena Core is designed for customers who want a completely custom installation design, including the insulation, stand and decorative enclosure. The Modena Core provides customers with the ability to leverage world-class refractory and oven design technology, in a cost-effective package. The Core oven includes the multi-piece oven dome, floor, landing, decorative opening, vent, door and high temperature mortar.

At the heart of the Modena Modular Series ovens are three lead-edge commercial pizza oven technologies:

  • Ultra-pure, high density, vibrated refractories for excellent high heat pizza baking and oven durability;
  • Space-age ceramic insulators for unrivaled heat retention;
  • Perfect oven design, including optimal dome height, oven opening size, and dome and floor thickness, plus fully interlocking oven pieces.

The Modena Series ovens are listed to the UL2162 (wood pizza ovens), UL737 (wood stove), ANSI Z83.11B (commercial gas cooking appliance) and NSF/ANSI-4 (sanitation) for restaurant use in the US.

The weight and thermal mass of these pizza ovens are designed for the rigors of high temperatures and 24-hour, 365 day per year use. Constructed from 3 - 4" thick vibrated, high alumina refractory, the Modena ovens are capable of quickly reaching and holding the 800F temperature required to produce up to 240 pizza per hour.

The Modena Modular Series ovens are available in four configurations:

ModenaW/kit. The complete oven, knocked down, wood-fired.

ModenaG/kit. The complete oven, burner and controls, knocked down, gas/wood.

ModenaW/core. The core refractory oven, wood-fired.

ModenaG/core. The core refractory oven, burner and controls, gas/wood.
